The Challenge
A twenty-week Covid closure gave the Palmiero family a rare chance to rethink everything. The brief: completely overhaul a beloved, award-winning restaurant — running since 1981 — without losing an ounce of its heritage or warmth.
The Solution
WhitCo CEO Vita Whitaker shaped the vision with the family. Our team then made design decisions in real time, in parallel with construction — delivering a Carrera-marble art-deco dining room and a sumptuous new upstairs cocktail bar.
