The Brief

Owned and run by two generations of the Palmiero family since 1981, Palmichael had twice been named Restaurant of the Year — built on authentic Italian food and warm, genuine service.

When Covid forced a twenty-week closure, the family chose to see opportunity. They invited WhitCo to envision a new and better Palmichael — one that honoured its heritage while stepping into something more refined.

Overhaul a beloved, award-winning restaurant — running since 1981 — without losing an ounce of its heritage or warmth, all within a single closure window.

The Solution

A real-time design-and-build partnership: a Carrera-marble art-deco dining room downstairs, and a sumptuous new cocktail bar upstairs — once the family home.

02 — Design

Marble, in real time

WhitCo CEO Vita Whitaker shaped the vision with the family. Our team then made design decisions in parallel with construction — resolving each snag on site as it appeared.

Downstairs became a stunning art-deco dining room in white Carrera marble.

03 — The Bar

A room for evenings

The versatile new upstairs space hosts up to 30 guests dining, or 50 for drinks and cicchetti, with direct access to the bar — perfect for receptions and celebrations.
